Easter Eggs, Peeled

Šiemet Velykas švenčiam savaite anksčiau. Nes kitą savaitgalį būsiu išvykusi. Todėl kiaušinius mes nudažėm iš anksto, praėjusį penktadienį, ir jau suspėjom visus sukirsti. Iš visų nuotraukose pademonstruotų margučių aš ir keli į svečius pas mus atėję maži pagalbininkai prigaminom visą tuntą įdarytų kiaušinių. Greitas pamarinavimas su actu ir prieskoniais tokiam patiekalui labai tiko; kiaušinukai buvo ne tik kad gražūs ir margai velykiniai, bet ir su labai malonia rūgštele.

Iš tokių margučių labai drąsiai galima prišinkuoti spalvotų kiaušininių salotų, arba juos galima paprasčiausiai dėti ant paskrudintos duonos, su trupučiu majonezo arba garstyčių. Trumpai tariant, šiems kiaušiniams tikrai be vargo surasit masę labai gardžių panaudojimų, todėl dažykit daug, negailėkit.

Marinuoti margučiai be lukštų

Kietai išvirti kiaušinius, nulupti. Paruošti marinatą:

  1. Geltona spalva:

1 ½ stiklinės vandens

½ stiklinės norimo acto (obuolių, balto vyno, ryžių, kt.)

2 šaukštai cukraus

1 šaukštelis druskos

Užvirinti, maišyti, kol cukrus ištirps. Nukelti nuo ugnies, įberti 1 šaukštą ciberžolių miltelių, 1 šaukštelį malto imbiero. Išmaišyti, sudėti nuluptus kiaušinius, marinuoti, kol kiaušiniai taps norimos spalvos.

 

  1. Rausva spalva:

2 stiklinės vandens

½ stiklinės norimo acto (obuolių, balto vyno, ryžių, kt.)

2 šaukštai cukraus

1 šaukštelis druskos

1 tarkuotas burokelis

2-3 anyžiaus žvaigždutės

Užvirinti, maišyti, kol cukrus ištirps. Sumažinti ugnį, virti maždaug 10-15 minučių, Nukelti nuo ugnies, nukošti, į tirpalą sudėti nuluptus kiaušinius, marinuoti, kol kiaušiniai taps norimos spalvos.

 

  1. Oranžinė spalva:

Į geltonos spalvos marinatą įpilti šiek tiek rausovos spalvos marinato, sudėti nuluptus kiaušinius, marinuoti, kol kiaušiniai taps norimos spalvos.

 

  1. Violetinė spalva:

2 stiklinės vandens

½ stiklinės norimo acto (obuolių, balto vyno, ryžių, kt.)

2 šaukštai cukraus

1 šaukštelis druskos

2 stiklinės tarkuoto mėlynojo kopūsto

2 šaukštai kmynų

Užvirinti, maišyti, kol cukrus ištirps. Sumažinti ugnį, virti maždaug 10-15 minučių, Nukelti nuo ugnies, nukošti, į tirpalą sudėti nuluptus kiaušinius, marinuoti, kol kiaušiniai taps norimos spalvos.

 

  1. Mėlyna spalva:

Į violetinės spalvos marinatą įberti 1 šaukštelį valgomosios sodos. Į tirpalą sudėti nuluptus kiaušinius, marinuoti, kol kiaušiniai taps norimos spalvos.

 

 

 

 

Pickeled Easter Eggs

  1. Yellow color:

1 ½ cups water

½ cup vinegar (white wine, apple, rice, etc.)

2 tablespoons sugar

1 teaspoon salt

Bring to boil, stir until sugar disolves. Remove from heat. Add 1 tablespoon turmeric, 1 teaspoon ground ginger. Add peeled hardboiled eggs. Marinate until eggs reach desired color.

 

  1. Pink color:

2 cups water

½ cup vinegar (white wine, apple, rice, etc.)

2 tablespoons sugar

1 teaspoon salt

1 shredded beet

2-3 anise stars

Bring to boil, stir until sugar disolves. Reduce heat and cook for 10 -15 minuters. Strain. Add peeled hardboiled eggs. Marinate until eggs reach desired color.

 

  1. Orange color:

Mix yellow marinate and a little bit of pink marinate. Add peeled hardboiled eggs. Marinate until eggs reach desired color.

 

  1. Purple color:

2 cups water

½ cup vinegar (white wine, apple, rice, etc.)

2 tablespoons sugar

1 teaspoon salt

2 cups shredded purple cabbage

2 tablespoons caraway seeds

Bring to boil, stir until sugar disolves. Reduce heat and cook for 10 -15 minuters. Strain. Add peeled hardboiled eggs. Marinate until eggs reach desired color.

 

  1. Blue color:

Add 1 teapsoon of baking soda to purple marinate. Stir to dissolve. Add peeled hardboiled eggs. Marinate until eggs reach desired color.

 

Mel’s Cake

The recipe for this cake was given to me by my neighbor Mel. She has posted a message on our neighborhood’s email listserve on St. Patrick’s day, saying that the cake is fantastic, she makes it every year for her St. Patrick’s day party, and wishes she made it more often.

Mel lives on my road, a few houses down. It is a country road, no sidewalk, barely any road shoulder, just two narrow strips of gravel on both sides of asphalt that go steeply down into the ditches. On both sides of the road are the houses, spaced randomly, some are closer together, some are separated by corn fields or woods. That is where me and my neighbors live. Since there is no street, there isn’t really a neighborhood feeling on our road, but we do see our neighbors sometimes, especially the ones that live across the street and in the house next door. We see neighbors walking their dogs, shoveling their driveways or raking leaves. We wave at each other, sometimes yell loud Hello, because, as I said, all houses are quite far apart. We don’t get together for backyard parties or barbeques, but we are aware of each other’s existence and always reach out for each other, if there is an emergency, or if someone needs to get rid of overabundant apples, or pears, or petunias, or if someone notices some suspicious activity going on at night.

Mel is one neighbor that I see almost every day, during her morning walks up our road, then back down. I run with my dog Izzy, Mel walks, sometimes with her brother, 365 mornings a year, every year, for 10 years now. Sometimes we stop and chat for a minute. Sometimes we exchange emails. So we kinda know each other a little bit.

Mel’s cake is made out of cake mix from the box with added eggs, and oil, and some instant pudding mix, also out of the box. Pudding mix turns brightly fluorescent green, when you mix it into the batter. For a gal like myself, who tends to make everything from scratch, starting not too far from the point of growing your own wheat, milling your own flour, and turning all that into a cake, three and a half weeks later, a cake from the box might not be exactly the type that I would make, if left on my own devices. I remember myself a few years back, when I was just starting to work on this food blog, me and my friend Jurate, an exceptional gourmet cook, would watch some of Sandra Lee’s videos and would laugh hysterically at Sandra’s semi-home-made cakes and other creations, shlopped together by mixing store bought angel food cake, a can of peaches, a tub of cool whip and a bunch of paraffin candles, or a string of plastic beads (I kid you not!!). Those videos still look pretty ghastly to me, but my take on semi home made cooking has changed drastically over the years. I still make everything from scratch, because I love to do so, because I love to make things, and I probably would mill my own flour, if given the opportunity. But I don’t see much evil in shortcuts, or simple tricks that make life easier, that get us to the cake or to a batch of muffins faster, and bring us just as much joy as those many-days-of-hard-work-and-ton-of-elbow-grease recipes. The cake or a batch of cupcakes from the box can be just as loved and appreciated, and bring just as many smiles and happy tummies, than those that we baked starting from ground zero. So sometimes one might ask a question: why bother? Make a cake from the box, if you want to do so, I will not frown. Or go and make your own flour, tend your own eggs and churn your own butter, if you so desire, it all sounds equally good to me.

Mel’s cake is very good. It is just a tiny bit green, it is very moist and fragrant, it has nice crumb, cuts nicely, looks good, and tastes great. I made it for my son’s end of basketball season party. The cake was very well received and was eaten so fast that it was almost unreal, probably within 15 minutes or so. Gone. All of it. And then there were couple kids who came looking for more, but there wasn’t any left. I think it would have been a great idea to make two of those same cakes. Next time I’ll think about making two.

Pistachio Marble Cake

 

Preheat over to 350 degrees.

Combine one package yellow cake mix, 1 package pistachio instant pudding, 4 eggs, one cup water, 1/2 cup oil and 1/2 tsp. vanilla in large mixer bowl, blend.  Beat at medium speed for two minutes.  Pour 1/3 of the batter into a separate bowl; stir in 1/4 cup chocolate syrup.  Spoon batters alternately into greased (I use Pam) Bundt pan.  Zigzag a knife through batter to marble. Check with a toothpick at 32 minutes.  Cool for 15 minutes before removing from pan.  

This is my frosting recipe---so good!  

1 package instant pistachio pudding

3/4 cup milk

8 oz. Cool Whip  

Mix pudding and milk, let stand about five minutes or until stiff.  Fold in Cool Whip.  Spread over cake.    Refrigerate.

 

 

 

 

Ukrainian Lithuanian Beet & Cabbage Dinner

Right after our Indian dinner with Sujata my first thought was to have another Indian dinner with Sujata; and my second thought was to cook a traditional Ukrainian meal with my Ukrainian friend Yuliya. I thought we both will get together some Saturday or Sunday afternoon, Yuliya will bring the kids, we’ll get some good music going in the kitchen while we whip up some borscht and some stuffed cabbage, maybe will bake a quick cake for dessert. That would be very nice, except who has time for cooking such dinners? And even more so: who has time to accommodate it so that two of us would have the same weekend available for a get-together? Nobody has such time. The weekends that worked for me, did not work for Yuliya, and vice versa. So I decided to change my plans a little bit.

Last Saturday Yuliya went to competition. I took her kids: Katia, Mila, and Arthur. We spent a nice snowy day doing things in the snow and indoors. We pitched a tent in my living room. I made chicken soup for Saturday’s dinner, then borscht and stuffed cabbage leaves for Sunday. Girls made cookies. I made cake and ice cream. Boys played video games. Then Yuliya came back from her travels, we made plans for Sunday. On Sunday we all got together again and had our Ukrainian/Lithuanian dinner, consisting of borscht, stuffed cabbage, cake and all, just as planned.

Thank you, Yuliya, for letting me have your kids. They are absolutely wonderful. The entire weekend was a real treat! Lets do the same thing again some time soon. Maybe next time we can even manage to cook something together.

Burokėlių sriuba

Dideliame puode pakaitinti porą šaukštų aliejaus, sudėti susmulkintą svogūną stambiai sutarkuotas morkas, burokėlius, plonais šiaudeliaus supjaustyto kopūsto, porą lauro lapų, kelis pipirus, kmynų ir susmulkinto česnako. Viską pakepinti ant vidutinio stiprumo ugnies, kol daržovės suminkštės, maždaug 5-10 minučių. Į puodą su daržovėmis įdėti pomidorų pastos, supilti sultinį, sumesti postambiai supjaustytas bulves, raugintus kopūstus, pertrintū konservuotų pomidorų, druskos ir cukraus. Puodą uždengti ir virti kol bulvės ir rauginti kopūstai suminkštės, maždaug pusvalandį. Puodą nukelti nuo ugnies, įbesti smulkintų krapų. Tiekti tuojau pat, su grietine.

 

 

Balandėliai

Dideliame puode užvirinti didelį kiekį pasūdyto vandens. Išpjauti kopūsto šerdį, kopūstą įmesti į verdantį vandenį ir virti kol lapai atsiskirs. Kopūstą traukti iš vandens, atskirti lapus, palikti,kad atvėstų.

Paruošti įdarą: debenyje sumaišyti jautienos arba kiaulienos faršą, apvirtus ryžius, apkepintas tarkuotas morkas, apkepintus susmulkintus svogūnus, įberti druskos, pipirų, smulkintų šviežių petražolių, viską gerai išmaišyti.

Į atvėsusius lapus įsukti įdarą. Balandėlius apkepinti keptuvėje su trupučiu aliejaus. Dėtį į platų gilų puodą, supilti pertrintus konservuotus pomidorus, puodą uždengti ir troškinti maždaug 30 minučių, kol įdaras pilnai išvirs. Nukelti nuo ugnies, užbarstyti švežių smulkintų krapų. Tiekti tuojau pat, su virtomis bulvėmis.

 

 

Obuolių pyragas

Recepto šaltinis: Grab and Go Recipes

 

1 ½ stiklinės miltų

1 šaukštelis kepimo miltelių

½ šaukštelio malto cinamono

Žiupsnelis druskos

4-5 obuoliai, nulupti, supjaustyti griežinėliais

4 kiaušiniai

1 stiklinė cukraus

1 stiklinė pasukų arba kefyro

1 šaukštas grietinės

1 lazdelė sviesto, ištirpinto

Orkaitę įkaitinti iki 175oC. Stačiakampę kepimo formą ištepti sviestu, ištiesti sviestiniu popieriumi, popierių taip pat patepti sviestu.

Kartu persijoti miltus, kepimo miltelius, cinamoną ir druską.

Didokame dubenyje plakti kiaušinius ir cukrų 5 minutes. Supilti sviestą, pasukas, sudėti grietinę ir gerai išmaišyti. Suberti miltų mišinį ir obuolius, išmaišyti kol nebeliks sausų miltų ruožų. Tešlą supilti į paruoštą formą, išlyginti paviršių ir pašauti į įkaitintą orkaitę. Kepti kol pyrago viršus gražiai pagels. Traukti iš orkaitės, palikti formoje kol atvės. Supjaustyti kvadratėliais, užsijoti cukraus pudros ir nešti į stalą.

 

 

Pasukų ledai su aguonomis

Recepto šaltinis: Sean Brock | Heritage

1 stiklinė* riebios grietinėlės

½ stiklinės cukraus

4 kiaušinių tryniai

1 stiklinė pasukų

7 g želatino

1/3 stiklinės aguonų

1 citrinos sultys

Vidutinio dydžio puode pakaitinti grietinėlę kol pradės kilti garai. Nukelti nuo ugnies.

Vidutinio dydžio dubenyje šluotele išplakti kiaušinių trynius ir cukrų kol masė pabals ir sutirštės. Nenustojant plakti, į trynių masę pamažu plona srovele supilti karštą grietinėlę. Mišinį perpilti atgal į puodą ir kaitinti ant silpnos ugnies, pastoviai maišant, maždaug 3-4 minutes. Nukelti nuo ugnies.

Mažame dubenėlyje išmaišyti želatiną ir ¼ stiklinės pasukų, palikti 5 minutėms, kad išbrinktų. Išbrinkusį želatiną sudėti į puodą su karštu giretinėlės-tynių mišiniu ir plakti, kol želatinas pilnai ištirps. Supilti likusias pasukas, citrinos sultis, suberti aguonas ir gerai išmaišyti. Puodą uždengti ir dėti į šaldytuvą, kad mišinys gerai atšaltų, mažiausiai 3 valandoms, arba pernakt.

Atšalusį mišinį išsukti ledų gaminimo mašinoje, perdėti į sandariai užsidarantį indą, uždengti ir dėti į šaldiklį, kad ledai gerai sustingtų.

 

 

Bananiniai sausainiai su šokoladu

3 lazdelės sviesto

2 stiklinės* cukraus

2 bananai

4 stiklinės miltų

1 šaukštas valgomosios sodos

½ šaukštelio druskos

Šokolado lašelių

1 stiklinė = 236 ml

Iki purumo išsukti sviestą ir cukrų. Sudėti bananus ir gerai išmaišyti. Tiesiai į dubenį su bananų mišiniu kartu persijoti miltus, sodą ir druską. Išmaišyti, kol nebeliks sausų miltų ruožų. Nepermaišyti. Kepti iki 165oC įkaitintoje orkaitėje maždaug 10 minučių, kol sausainiai lengvai paruduos. Neperkepti. Traukti iš orkaitės. Palikti ant skardos, kol pilnai atvės.

 

 

 

 

Borscht

In a large soup pot set over medium heat cook chopped onion, shredded carrots, shredded beets, thinly sliced cabbage, couple bay leaves, peppercorns, caraway seeds and sliced garlic, with a little bit of oil, until vegetables are softened, about 5-10 minute. Add vegetable or chicken stock, tomato paste, sauerkraut, cubed potatoes, large can of crushed tomatoes, salt and a tablespoon or two of sugar. Cover and cook until potatoes and sauerkraut are tender, about 20-30 minutes. Remove from heat, add a handfull of chopped fresh dill. Serve right away with generous helping of sour cream.

 

 

Suffed Cabbage Leaves

In a large pot boil large amount of salted water. Cut out the core of medium size green cabbage. Place whole cabbege into boiling water and cook until leaves begin to separate. Remove cabage from the pot, separate the leaves, let cool while making the filling.

In a large bowl mix ground beef or ground pork, partially boiled rice, sauteed shredded carrota and finely chopped onion, add salt, pepper, chopped fresh parslay, mix well. Wrap filling in cooled cabbage leaves into tight oval rolls.

Brown cabbage rolls in saute pan with a little bit of oil. Place browned cabbage rolls into a deep pan or wide pot, add crushed tomatoes, cover the pan and cook on medium heat until filling is cooked through, about 30 minutes. Remove from heat, sprinkle with chopped dill. Serve right away, with boiled potatoes.

 

 

Apple Cake

1 ½ cup flour

1 teaspoon baking powder

½ teaspoon ground cinnamon

Pinch of salt

4-5 medium apples, peeled, sliced

4 eggs

1 cup sugar

1 cup buttermilk

1 tablespoon sour cream

1 stick butter, melted

Preheat the oven to 350oF. Butter 9 x 11” baking pan, line with parchment, butter the parchment. Sift together flour, baking powder, cinnamon and salt. In a large bowl, beat eggs and sugar for 5 minutes. Add melted butter, buttermilk and sour cream. Mix to incorporrate. Add flour mixture and sliced apples, mix until smooth. Pour batter into prpeared pan, smoth the top. Bake in preheatedover for about 1 hour, until top is golden. Remove from oven. Let cool completely. Sut into squares dust with powdered sugar and serve.

 

 

Buttermilk Poppy Seed Ice Cream

1 cup heavy cream

½ cup sugar

4 egg yolks

1 cup buttermilk

2 teaspoons (¼ oz.) unflavored gelatin

1/3 cup poppy seeds

Juice of 1 lemon

Heat cream in a medium saucepan until steamy and hot, but not boiling. Remove from heat.

In a medium bowl whisk egg yolks and sugar until mixture is pale and thick. Slowly add hot cream in a thin stream into yolk mixture, while whisking constantly.

Place saucepan with yolk cream mixture onto low heat and cook, whisking constantly, until mixture begins to thicken and coats the back of the spoon. Remove from heat.

In a small bowl whisk gelatin and about ¼ cup buttermilk. Wait 5 minutes. Add gelatin mixture to saucepan with hot cream-yolk mixture and whisk until all gelatin dissolves. Add remaining buttermilk, lemon juice and poppy seeds. Mix well. Cover and refrigerate at least 3 hours or overnight.

Freeze chilled ice cream mixture in an ice cream maker. Transfer to an airtight container. Cover and freeze until firm.

 

 

Banana Chocolate Chip Cookies

3 sticks of butter

2 cups of sugar

2 ripe bananas

4 cups flour

1 tablespoon baking soda

½ teaspoon salt

Chocolate chips

Cream butter and sugar. Add bananas and mix well until uniform. Sift together flour, soda and salt, add to butter-banana micxture. Mix until no more dry flour remains. Do not overmix. Add chocolate chips, mix again.

Bake at 320oF for 10 minutes or less, until lightly browned. Remove from oven. Let cool on the baking sheet.
