Žuvis yra bene greičiausiai paruošiamas produktas; keptuvėje kepa vos kelias minutes; virš žarijų – irgi ne ilgiau; na o jeigu žuvis kepama “lėtai ir ilgai” (low and slow), tai tas ilgas ir lėtas kepimas užtruks maždaug pusvalandį. Todėl žuvį aš priskiriu greito maisto kategorijai. Žuvies dieną vakarienė sukomplektuojama žaibo greitumu. Dar ir desertui lieka laiko.

Lėtai kepta lašišos filė su chimichurri padažu

Lašiša:
1 lašišos filė ( 600 – 900 g)
Alyvuogių aliejaus
Jūros druskos
Maltų juodųjų pipirų

Chimichurri:
2 stiklinės šviežių kalendros lapelių
2 skiltelės česnako, perspaustos
1/2 stiklinės aliejaus (rapsų, sojų ar kito bekvapio)
1/4 stiklinės baltojo vybo arba šampano acto
1 šaukštas sambal oelek čili padažo
1 šaukštas mirin (saldinto sake vyno)
1 šaukštas citrinų sulčių
1 šaukštas šviežių raudonėlio lapelių
Druskos


Lašiša: orkaitę įkaitinti iki 95oC. Ant apatinės orkaitės lentynos padėti kepimo indą su vandeniu. Plačią kepimo skardą patepti aliejumi. Ant jos dėti lašišos filė, oda žemyn; lašišą patepti trupučiu aliejaus, pabarstyti druska ir maltais pipirais. Kepti maždaug 35 – 45 minutes, priklausomai nuo filė dydžio ir storio, kol sustandės. Tiekti tuojau pat, arba palaukti, kol atauš ir tiekti kambario temperatūros.

Chimichurri padažas: virtuviniame kombaine susmulkinti kalendros lapelius ir česnaką; supilti aliejų, actą,čili padažą, mirin, citrinų sultis; suberti raudonėlių lapelius ir viską gerai sumaišyti. Paskaninti druska. Padažą perdėti į dubenėlį. Tiekti su kepta lašiša.



Soba makaronų salotos su pesto, baklažanais ir pomidorais

450 g nedidelių plonų baklažanų,
1/2 stiklinės alyvuogių aliejaus, plius daugiau, patepimui
1/4 stiklinės kedrų riešutų (arba skaldytų migdolų, pekaninių karijų, graikiškų riešutų))
1 šaukštas balto vyno acto
2 stiklinės šviežių bazilikų lapelių
4 skiltelės česnako, perspaustos
1 šaukštas sojų padažo
250 g soba makaronų
1 stiklinė smulkių kekinių pomidorų, perpjautų pusiau
2 -3 nedideli agurkai, supjaustyti griežinėliais
1 stiklinė šviežių mėtų lapelių
Druskos
Maltų pipirų


Baklažanus perpjauti išilgai pusiau, iš visų pusių patepti aliejumi ir kepti virš žarijų arba keptuvėje, kol suminkštės ir vietomis apskrus. Nuimti nuo ugnies. Perdėti ant lėkštės arba pjaustymo lentelės ir supjaustyti 2 cm storio gabalėliais.

Nedidelėje keptuvėje ant vidutinio karštumo ugnies pakepinti riešutus, pastoviai maišant, kol pagels, maždaug 4 minutes. Nukelti nuo ugnies, perdėti į lėkštę ir palikti, kad atvėstų. Į tą pačią keptuvę įpilti 1 šaukštą alyvuogių aliejaus, sudėti perspaustas česnako skilteles ir kepti, retkarčiais pamaišant, kol apskrus, maždaug 2 – 3 minutes. Nukelti nuo ugnies.

Virtuviniame kombaine sumalti riešutus, baziliką ir kepintą česnaką; supilti aliejų, actą, sojų padažą ir trumpai viską išmaišyti. Paskaninti druska.

Dedeliame puode užvirinti pasūdyto vandens. Sudėti makaronus ir virti, kol al dente, maždaug 4 minutes. Nupilti vandenį. Makaronus perskalauti šaltu vandeniu ir paskleisti ant virtuvinio rankšluosčio, kad apdžiūtų.

Makaronus sudėti į didelį dubenį. Sudėti pesto ir atsargiai išmaišyti. Suberti baklažanų gabalėlius, pomidorų puseles, agurkų griežinėlius ir mėtas. Įbesti druskos, Atsargiai išmaišyti. Tiekti tuojau pat.




Citrininės tapijokos ir ledų desertas 
su mėlynių ir persikų kompotu

1 stiklinė vandens
1/2 stiklinės + 2 šaukštai šviežiai išspaustų citrinų sulčių
1/4 stiklinės + 2 šaukštai cukraus
1/2 stiklinės stambių tapijokos grūdelių
2 persikai, nulupti ir supjaustyti kąsnio dydžio gabalėliais
1 stiklinė mėlynių
1 cm ilgio imbiero šaknies gabalėlis, nuluptas
Žiupsnelis druskos
Vanilinių ledų

Vidutinio dydžio puode užvirinti vandenį, 1/2 stillinės citrinų sulčių ir 1/4 stiklinės cukraus. Į verdantį sirupą suberti tapijokos grūdelius ir virti, pastoviai maišant, kol suminkštės, maždaug 3 – 5 minutes. Nukelti nuo ugnies ir palikti, kad atvėstų; kartkartėmis vis pamaišyti.

Kitame puode užvirinti mėlynes, persikus, imbierą, druską, likusias citrinų sultis ir likusį cukrų. Virti ant silpnos ugnies, kol šiek tiek sutirštės, maždaug 5 minutes. Nukelti nuo ugnies. Palikti, kad atvėstų. Išgriebti imbiero gabalėlį.

Į desertinius dubenėlius arba stikllines dėti po kaušelį vanilinių ledų, ant viršaus užpilti vaisių kompoto ir citrininės tapijokos.











Slow roasted salmon with cilantro chimichurri

Recipe adapted from Yummy Supper

Salmon:
1 salmon fillet ( 1.5 – 2.0 pounds)
Olive oil
Sea salt
Ground black pepper

Chimichurri:
2 cups cilantro leaves
2 garlic clove, smashed
1/2 cup vegetable oil
1/4 cup white wine vinegar
1 tablespoon sambal oelek (Indonesian chile paste)
1 tablespoon mirin
1 tablespoon fresh lemon juice
1 tablespoon fresh oregano
Salt


Salmon: preheat oven to 200oF. Place a baking dish filled half way with water on the lowest rack of your oven, making for a nice moist environment for the salmon to cook.

Lay the intact salmon fillet on a lightly oiled baking sheet. Brush the salmon with a little more olive oil. Salt generously and sprinkle with freshly ground black pepper. Transfer salmon to the warm oven. Bake for 35 to 45 minutes, depending on the size and thickness of your fillet. Salmon is done when the fish feels just firm to the touch and is heated through. Serve the salmon right away or let it cool and serve it at room temperature .

Chimichurri: in a food processor, combine cilantro and garlic and pulse until finely chopped. Add the oil, vinegar, sambal, mirin, lemon juice and oregano and pulse to combine. Season with salt and transfer the chimichurri to a bowl. Serve alongside roasted salmon.







Soba Noodle Salad with Pesto, Grilled Eggplant and Tomatoes

1 pound Asian eggplant
1/2 cup olive oil, plus more for brushing
1/4 cup pine nuts (or any other nuts; walnuts, pecans, slivered almonds)
1 tablespoon white wine or champagne vinegar
2 cups basil leaves
4 garlic cloves, crushed
1 tablespoon soy sauce
1/2 pound buckwheat soba noodles
1 cup cherry tomatoes, halved
2 -3 small cucumbers, sliced
1 cup mint leaves, torn if large
Salt
Ground pepper

Cut eggplant lengthwise in half. Brush with both sides of each half with olive oil, sprinkle with salt. Grill or cook on a large sauté pan over high heat, until softened and lightly charred. Transfer the eggplant to a plate and let cool completely, then cut into 3/4-inch pieces.

In a small skillet toast the nuts over moderate heat, tossing, until golden, about 4 minutes; transfer to a plate and let cool. Add 1 tablespoon of olive oil to the hot pan, then add crushed garlic cloves and toast, stirring occasionally, until golden, about 2 – 3 minutes. Remove from heat.

In a food processor combine toasted nuts, basil and garlic and pulse until finely chopped. With the machine on, add the 1/2 cup of olive oil in a steady stream. Add vinegar and soy sauce and pulse to blend. Season the pesto with salt.

In a large saucepan of salted boiling water, cook the soba noodles until al dente, about 4 minutes. Rinse the noodles under cold water, then spread them on a kitchen towel to dry.

In a large bowl, toss the soba noodles with the pesto until evenly coated. Add the grilled eggplant slices, tomatoes, cucumber and 3/4 cup of the mint leaves and toss well. Season the soba noodle salad with salt. Sprinkle the remaining 1/4 cup of mint leaves on top and serve.





Lemon Tapioca Sundaes with Peach-Blueberry Compote

1 cup water
1/2 cup + 2 tablespoons fresh lemon juice
1/4 cup + 2 tablespoons sugar
1/2 cup medium pearl tapioca
2 peaches, peeled and diced
1 cup blueberries
One 1/2-inch piece of fresh ginger, peeled
Pinch of salt
Vanilla ice cream, for serving

In a medium saucepan, combine the water with 1/2 cup lemon juice and 1/4 cup sugar and bring to a boil, stirring to dissolve the sugar. Add the tapioca and cook over moderate heat, stirring often, until the pearls are plumped and tender, 3 to 5 minutes. Remove the tapioca from the heat and let cool to room temperature, stirring occasionally. Do not refrigerate.

Meanwhile, in another medium saucepan, combine the diced peaches, blueberries, smashed ginger and salt with the remaining 2 tablespoons of lemon juice and remaining 2 tablespoons of sugar and bring to a boil. Simmer over moderately low heat until the compote is deep purple and slightly thickened, about 5 minutes. Scrape the compote into a heatproof bowl and let cool completely. Pick out the ginger.

Scoop vanilla ice cream into glasses or bowls and top with the peach-blueberry compote. Garnish the sundaes with the tapioca and serve.
